At 160 calories per ounce for the daily calorie count and $1.80 per ounce for the pocketbook, Cowgirl Creamery Red Hawk cheese is expensive. And worth it.
I have liked cheese as most Americans do. On a hamburger. On what my brother called “smashed cheese sandwiches”. Grated on pasta.
I did not know artisan cheeses. Until recently. A new vice. I do not drink champagne now. Or other alcoholic beverages. But I feel about good cheese the way I used to feel about good champagne. And I do not mean that Veuve Cliquot Ponsardin swill. But Tattinger le Compte de Champagne, a vintage Krug or Dom. And to be especially festive, Crystal. A longing. A special reward after a difficult week.
But cheese. No poems to cheese. And one thinks of round red-faced Dutch people. Very, very white. When thinking of cheese. At least I do. And if you were to go to the Cowgirl Creamery website, and click the About Us link, you would see that Sue and Peggy fit that description, but are not Dutch. It is simply grand that they look exactly the way they do. What joy. And “artisan” is such a fine description of their cheeses.
I have Red Hawk and Pierce Point in the refrigerator now. And eke them out on toasted ciabatta and serve with a sweet, soft fruit for breakfast. I awaken thinking how fine a day it is knowing I will start it with cheese! Melted sunshine. No wonder I’m fat.
